When Food & Drink Wales commissioned me years back to develop two sustainability guides—one for foodservice establishments and another for home cooks—both highlighting local Welsh ingredients and traditional cooking, I embarked on an exploration of Wales' signature foods. This journey introduced me to cawl (known as lobscows in northern Wales) in depth. Drawing from culinary masters Dudley Newbery and Tomos Parry's methods, this preparation demonstrates how leftover lamb or simple bones can transform into a nourishing feast.
